Fish
- 2 cod fillets
- 2 tsp Bart Cajun Spice Blend
- Salt + pepper, to taste
- 1 tbsp olive oil
Slaw
- ¼ red cabbage, thinly shredded
- Juice of ½ lime
- Small handful coriander
- Salt
Sauce
- 3 tbsp Greek yogurt or sour cream
- Juice of ½ lime
- 1 tsp Bart Garlic Paste
To serve
- 4 small corn tortillas
- 1 spring onion, finely sliced
- Small handful fresh coriander, chopped
- Lime wedges
Method
1. Mix all the Cajun Spice Blend with olive oil, season with salt and pepper, and coat the cod.
2. Cook in a hot pan for 3–4 mins per side until flaky and lightly charred.
3. Toss cabbage with lime juice, coriander and salt.
4. Mix sauce ingredients together.
5. Warm tortillas, add slaw, flaked fish and drizzle with sauce.
6. Finish with spring onion, fresh coriander, and lime wedges.
