- 2kg pork ribs
- 1 onion (roughly chopped)
- 2tsp Bart garlic paste
- 1 red pepper (seeds removed and roughly chopped)
- 5tbsp black treacle
- 2tbsp red wine vinegar
- 2tsp Bart cajun seasoning
Method
- Preheat the oven to 190C/Gas 5. Arrange the ribs in a large roasting tin and cook for about 45 minutes until just tender. Transfer the ribs to a large plate or baking dish and pour off any fat.
- Put the remaining ingredients into a blender and process until smooth. Pour the mixture onto the ribs, turning them to coat. Cover and leave to marinate, turning occasionally. Prepare the barbecue.
- Cook the ribs over a medium heat on a barbecue, turn and baste half way through with the remaining marinade, until they are sticky and charred on the outside.
Note: If its not a BBQ day, you can do step 3 under a hot grill.
