- 1 tbsp Bart cajun seasoning
- 4 tomatoes
- diced
- 4 spring onions
- finely sliced
- 1/2 tsp Bart dried oregano
- 1/2 tsp Bart dried thyme
- 1 tbsp olive oil
- 1 tbsp red wine vinegar
- 800g frozen skinny fries
- 160g Monterey jack cheese
- grated
- 120ml sour cream
- 1-2 tsp Bart green chilli paste
- Small bunch chopped coriander
Method
- Heat the oven according to the pack instructions on the fries. Finely dice the tomatoes and mix together with the sliced spring onions, oregano, thyme, oil and vinegar. Season well and set aside for the flavours to mingle.
- Tip the fries into a large baking tray and cook according to the instructions until crisp and golden. Once they are done, if they’re dry drizzle with a small amount of oil, then sprinkle with the Bart Cajun seasoning. Shake well until all of the fries are coated.
- Using an oven proof dish, spread out a layer of fries and top with some of the cheese. Repeat this layering, using up the fries then put the last of the cheese on top and return to the oven for 5 mins to melt the cheese.
- While the cheese is melting, stir the chilli paste through the sour cream until it’s just rippled.
- To serve, dollop and drizzle the salsa and sour cream over the fries and sprinkle with some chopped coriander.
