Method

  1. Heat the oil in a large frying pan over a medium-high heat. Add the onion and peppers and cook for 6–8 minutes, stirring occasionally, until softened and starting to colour.
  2. Stir through the Bart Fajita Spice Blend or Smoky BBQ Seasoning and cook for 1 minute until fragrant. Stir in the tomato puree and cook for a further minute.
  3. Add the chopped tomatoes and black beans. Stir well and simmer for 8–10 minutes, until the tomatoes have reduced and the mixture is thick and rich.
  4. Meanwhile, mix the Greek yoghurt with the lime juice and a pinch of salt.
  5. Warm the tortillas according to the packet instructions. Spoon the smoky bean mixture into the wraps and top with grated Cheddar and a drizzle of lime yoghurt. Finish with coriander if using.

Chef’s Tips

  • Let the veg colour: Don't stir too often. A little colour on the peppers and onion adds extra depth.
  • Cook out the spices: Give the Fajita Spice Blend or Smoky BBQ Seasoning a minute in the pan before adding the tomatoes to bring out its flavour.
  • Make it extra saucy: If the bean mixture gets too thick, add a splash of water and stir through before filling your wraps.
