Quick Bean Fajitas
Black bean fajitas with juicy peppers served with Cheddar and a zingy lime yoghurt. Flavour with either our Smoky BBQ Seasoning for a sweet smoky taste or our Fajita Spice Blend for a spicier twist.
Method
- Heat the oil in a large frying pan over a medium-high heat. Add the onion and peppers and cook for 6–8 minutes, stirring occasionally, until softened and starting to colour.
- Stir through the Bart Fajita Spice Blend or Smoky BBQ Seasoning and cook for 1 minute until fragrant. Stir in the tomato puree and cook for a further minute.
- Add the chopped tomatoes and black beans. Stir well and simmer for 8–10 minutes, until the tomatoes have reduced and the mixture is thick and rich.
- Meanwhile, mix the Greek yoghurt with the lime juice and a pinch of salt.
- Warm the tortillas according to the packet instructions. Spoon the smoky bean mixture into the wraps and top with grated Cheddar and a drizzle of lime yoghurt. Finish with coriander if using.

Chef’s Tips
- Let the veg colour: Don't stir too often. A little colour on the peppers and onion adds extra depth.
- Cook out the spices: Give the Fajita Spice Blend or Smoky BBQ Seasoning a minute in the pan before adding the tomatoes to bring out its flavour.
- Make it extra saucy: If the bean mixture gets too thick, add a splash of water and stir through before filling your wraps.
