Pumpkin Spice French Toast

Pumpkin spice blend (Makes extra)
- 2 tbsp Bart ground cinnamon
- 2 tsp Bart ground ginger
- 1 tsp Bart ground nutmeg
- 1/2 tsp Bart ground allspice
- 1/2 tsp Bart ground cloves
French toast
- 8 slices brioche bread
- 2 large eggs
- 100g pumpkin puree
- 200ml whole milk
- 1 tsp vanilla extract
- 2 tsp pumpkin spice blend
- 5 tbsp granulated sugar
- 1 tbsp vegetable oil, for frying
- Maple syrup and whipped cream to serve, optional
Method
1. Combine the ingredients for the pumpkin spice blend in a small bowl.
2. Add the eggs, pumpkin puree, whole milk, vanilla extract, 1 tsp of pumpkin spice blend, and 1 tbsp of sugar to a wide shallow bowl. Whisk with a fork until well combined.
3. Heat the oil in a large frying pan over a medium heat.
4. Dip each slice of bread into the egg mixture so both sides are coated, don’t allow them to get soggy.
5. Fry each slice until golden brown on both sides, around 5-7 minutes in total. You will need to do them in batches.
6. Meanwhile, mix the remaining 1 tsp of pumpkin spice blend with the remaining 4 tbsp of sugar. Spread onto a plate
7. Put the toast straight into the sugar and flip to coat all over.
8. Serve with whipped cream and maple syrup, if desired.
