These fluffy, American style pancakes make a perfect autumn breakfast

- 200g plain flour
- 2tsp baking powder
- 2tbsp caster sugar
- 1 egg
- 275ml milk
- 45g butter
- 4 apples (peeled, cored and chopped into small chunks)
- 1/2tsp Bart ground cinnamon
- maple syrup (to serve)
Method
- In a bowl, mix together the flour, baking powder and 1tbsp sugar. In a jug, whisk together the egg and milk, then beat into the flour to make a thick, smooth batter.
- Melt half the butter in a saucepan, add the apples, 1tbsp sugar and cinnamon and cook gently, stirring frequently, until soft. Keep warm.
- Melt the remaining butter in a non-stick frying pan over a medium heat, then drop in 2tbsp of the batter to make one pancake. When little bubbles appear all over the top and the surface has dried, turn over and cook until golden. Remove from the pan and keep warm whilst you repeat the process and you've use all of the batter.
- Serve with the apple and some maple syrup.
