- 1 egg
- 4 tablespoon sugar
- 1 teaspoon bicarbonate of soda
- 2 teaspoon baking powder
- 3 tablespoon sunflower oil
- 3 tbsp whole milk
- 275g plain flour
- Oil for frying (sunflower or vegetable)
- 100g caster sugar
- 1 tbsp Bart Ground Cinnamon for coating + 1 tsp for doughnut mix
- Pinch of salt
Method
- In a large bowl, whisk together the eggs and 4 tablespoons of sugar.
- Next, add the oil, bicarbonate of soda, baking powder and 1tsp of cinnamon to the bowl. Whisk the mixture until everything is well combined.
- Pour in the milk gradually, continuing to whisk until the batter becomes smooth.
- Add the flour bit by bit, until you achieve a slightly sticky dough. The dough should not be overly sticky, but be cautious not to add too much flour, as this can result in hard doughnuts. If necessary, add extra flour to attain the desired consistency.
- In a wide and heavy frying pan, heat the oil (to around 180c).
- While the oil is heating, shape the doughnuts. Grease your hands with oil, then take a small handful of dough. Use your finger to poke a hole in the center and carefully stretch it until the hole reaches about 1 inch (2.5 cm) in diameter.
- Also use this time to combine the sugar, cinnamon and a pinch of salt on a large plate or tray, ready for coating the doughnuts.
- Carefully place a few formed doughnuts into the hot oil, ensuring not to overcrowd the pan. Allow them to brown on one side, then flip and brown the other side. It should only take a few minutes on each side.
- Once the doughnuts are fried, use a slotted spoon to remove them from the oil and transfer them to a plate lined with paper towels. Allow to cool for a minute or two, unitl they can be handled.
- Gently toss the doughnuts in the cinnamon sugar, until evenly coated.
- Serve while the doughnuts are still hot - enjoy!
