Malabar green banana curry

This curry is inspired by the coastal flavours of Southern India. Bananas and curry may not seem the perfect match but this dish will change your mind.

- 2 cloves Garlic
- 1/2 tsp Bart Rock Salt
- 1/4 tsp Bart Paprika
- 1tsp Bart coriander seeds
- 2tsp Bart Malabar masala
- 2tbsp Oil
- 1 Onion (finely sliced)
- 3 Unripe bananas (roughly chopped)
- 2tbsp Yoghurt
- 200ml Vegetable stock
Method
- With a pestle and mortar, grind the garlic, salt and spices to a thick paste.
- Heat the oil in a heavy based pan and gently cook onions until golden.
- Stir in Malabar paste and continue to cook for another minute.
- Add the banana and allow to brown lightly then stir in the yogurt and stock and cook until bananas are soft.
