This prawn curry is incredibly quick to make and packs some serious flavour

- 3tbsp Bart massaman curry paste
- 400g large prawns
- 50g Bart creamed cocounut (grated)
- 300g baby corn
- Rice
Method
- Heat a frying pan and cook the massaman curry paste for 30 seconds.
- Add the prawns to the pan and stir to coat.
- Add grated coconut to the pan along with enough boiling water to cover ¾ way up the prawns. Stir well until the coconut melts.
- Tip the baby corn into the pan, season and cook for 3-4 minutes until the prawns are cooked through and the corn is tender.
- Serve with rice.
- Try swapping the prawns for chicken and add any other veg you like.
