- 1 tsp Vegetable oil
- 2 tbsp Bart Keralan Spiced Coconut Paste
- 1 brown onion, finely chopped
- 400g tinned chopped tomatoes
- 200g large raw prawns, peeled and deveined
- Large bunch fresh coriander, chopped
- Steamed rice/naan to serve
Method
1. Heat the oil in a large frying pan over medium heat. Add the onion and cook, stirring often, until softened, about 4 minutes.
2. Add the Keralan Spiced Coconut Paste and stir for another minute. Pour in the tomatoes and simmer gently until thickened, about 5 minutes.
3. Add the prawns and cook until they turn pink and are fully cooked through.
4. Stir in the chopped coriander.
5. Serve with steamed rice or warm naan.
