Baharat spiced burgers
- 4 burger buns
- Handful shredded iceberg lettuce
- 4 large tomato slices
- Small handful crispy onions
- 500g beef mince, 10-15% fat
- 1 tbsp Baharat spice mix
- 1 tsp Bart garlic granules
Sumac onions
- 1 large red onion
- 2 tsp Bart sumac
- Pinch Bart sea salt
- 1 tbsp freshly squeezed lemon juice or apple cider vinegar
- Handful fresh parsley, stalks removed and finely chopped
- 1 tbsp extra virgin olive oil
Yoghurt sauce
- 200g plain natural yoghurt
- ½ English cucumber, finely chopped
- 1 tsp Bart mint
- 1 tsp Bart garlic paste
- ¼ tsp salt
- 1 tbsp extra virgin olive oil
Harissa mayo
- 6 tbsp mayo
- 2 tbsp harissa
Method
1. Peel and thinly slice the onion with a sharp knife. Add the onion to a large bowl along with sumac, salt and lemon juice (or apple cider vinegar). Stir well, ideally mixing with your hands and squeezing the onions a little to help break them down. Allow to marinate for 30 minutes. Add the parsley and extra virgin olive oil and mix well.
2. Meanwhile, make the cucumber yoghurt. Add the yoghurt and water to a medium bowl and whisk together well. Add the cucumber, mint, garlic, salt and olive oil and stir well.
3. Now make the burgers, to a medium bowl add the beef, Baharat, and garlic granules. Mix well. Form into 4 equal sized patties. Grill until cooked to your preference.
4. Toast the buns on the grill until golden brown. Spread each bottom bun half with a spoonful of harissa mayo. Top with a handful of shredded lettuce followed by a slice of tomato, and a burger patty. Top with the yoghurt and pickled onions. Sprinkle over some crispy onions and top with the top bun. Serve!
