These arayes are beef-stuffed flatbreads flavoured with our spicy, peppery, and aromatic Baharat spice blend. They are pan-fried until crispy and golden and served with yoghurt and garlic sauce.

- 500g ground beef, max 5% fat
- 1/2 medium onion, minced
- 3 tbsp fresh parsley, finely chopped
- 1 tbsp Bart garlic paste
- 1 tbsp tomato puree
- 2 tsp Bart Baharat seasoning
- ½ tsp Bart hot smoked paprika
- ½ tsp Bart ground cinnamon
- ½ tsp Bart ground cumin
- Pinch salt
- 1 tbsp Bart pomegranate molasses
- 4 large flat breads
- 1 tbsp olive oil
To serve
- Yoghurt
- Garlic sauce (toum)
Method
1. Combine the beef, onion, all the seasonings, garlic paste, tomato puree, and pomegranate molasses in a large bowl. Mix by hand until well combined.
2. Slice the flatbreads into quarters. Fill each quarter with 3-4 tbsp of the mixture, depending on the size of your flat breads. Use the back of a spoon to spread the mixture well.
3. Heat the oil in a large pan. Fry the arayes in batches for 3-5 minutes on each side, adding more oil to the pan if necessary. Once the meat is cooked through and the flatbreads are golden brown, serve immediately with yoghurt and garlic sauce.
