Simple and packed full of flavour, baba ganoush is a Lebanese appetiser that is perfect served with fresh vegetables and flatbreads

- 2 aubergine
- 2 tbsp olive oil
- 2 tbsp tahini
- 1/2 tsp Bart cumin ground
- 2 tsp Bart smoked garlic paste
- 1/4 tsp Bart mild chilli powder
- 1 tsp Bart sumac
- Juice of 1 lemon,
Method
- Char the aubergines over a gas flame, use a tongs to turn them until the skin is charred and peeling all over and the flesh is soft. Allow to cool then peel the skin under running water.
- Mash and chop the aubergine flesh in a bowl with the oil, tahini, cumin, garlic, chilli and half of the lemon juice. Season to taste and add more lemon juice if needed. You can make the Baba as smooth or chunky as you like.
- Spoon into a shallow bowl, sprinkle with sumac and add a drizzle of olive oil to serve.
