- 2 chicken breasts
- 60ml vegan cream
- 1tsp dijon mustard
- 3tbsp honey
- 100ml vegetable stock
- Large glass of white wine
- Salt and pepper
- Green Beans
- Roast Potatoes
- Bart Parsley
Method
- Season the chicken with salt and pepper.
- Add some oil to a pan and sear the chicken for 3mins on each side.
- Remove from the pan and set aside.
- In a bowl combine the mustard, honey, and cream.
- Deglaze the pan with a glass of white wine.
- Add in the stock and summer for 10mins.
- Pour in the cream mixture, stir and season and to taste.
- Place the chicken back into the pan and cover with the sauce.
- Simmer on a low heat for a further 15mins until the chicken is cooked through.
- Serve with mini roasted potatoes, green beans and parsley.
