A rich tomato and pepper shakshuka made with our secret ingredient, Bart Harissa Spice Blend, which adds a fruity twist with a kick of mint, then finished with crumbled feta. The perfect flavour-packed brunch.Ingredients

- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3 Bart Garlic Paste
- 1 red pepper, diced
- 2 tsp Bart Harissa Spice Blend
- 1 tsp Bart Sweet Smoked Paprika
- ½ tsp Bart Chilli Flakes (adjust for spice)
- 1 tbsp tomato puree
- 1 x 400g tin chopped tomatoes
- Salt + black pepper
- 4 large eggs
- 40g feta, crumbled
- Fresh coriander or parsley
- Fresh red chilli, thinly sliced
Method
1. Heat olive oil in a frying pan over medium heat. Cook onion and pepper for 6–8 mins until soft.
2. Add Garlic Paste, Harissa Spice Blend, Smoked Paprika and Chilli Flakes. Cook for 1 minute.
3. Stir through tomato puree, then add chopped tomatoes. Simmer for 10–12 mins until thickened.
4. Make 4 small wells in the sauce and crack in the eggs.
5. Cover with a lid and cook for 5–7 mins until the whites are set but yolks are still soft.
6. Finish with crumbled feta, fresh herbs and fresh chilli.
