Chipotle Bean Chilli with Eggs

Rich tomatoey beans and eggs flavoured with spicy chipotle chilli flakes and smoked paprika. Served with crusty bread and sprinkled with crumbled feta and fresh coriander.

- 1 tbsp vegetable oil
- 1 onion, finely chopped
- 2 tsp Bart chipotle flakes
- 1 tsp Bart sweet smoked paprika
- 1 tsp Bart smoked garlic paste
- 1 x 400g can mixed beans, drained and rinsed
- 2 x 400g black beans, drained and rinsed
- 2 x 400g chopped tomatoes
- 2 tbsp tomato puree
- 1 tsp Bart oregano
- 1 tsp sugar
- 4 large eggs
- Small handful fresh coriander
- Crumbled feta, to serve
- Crusty bread or tortillas, to serve
Method
1. Heat the vegetable oil over a medium heat in a large deep frying pan. Fry the onion for 5 minutes, or until soft. Add the chipotle flakes, sweet smoked paprika, and garlic paste and fry for a further minute.
2. Add the beans, tomatoes, tomato puree, oregano, and sugar. Season well with salt and pepper. Simmer for 15-20 minutes, until thickened, stirring occasionally. Add splashes of water if the mixture becomes dry.
3. Make 4 holes and crack an egg into each one. Turn the heat to low. Cover the pan and simmer for around 10 minutes, or until the egg whites are cooked, but the yolks are still runny.
4. Sprinkle with coriander and crumbled feta.
5. Serve with the crusty bread or tortillas.
