- 2 tbsp olive oil
- 1 red onion, finely chopped
- 1 red bell pepper, deseeded and diced
- 4 tbsp Bart Baharat tomato paste
- 2x 400g cans whole plum tomatoes
- 6 large eggs
- Salt and pepper, to taste
- Handful fresh parsley and/or coriander, roughly chopped
- Crusty bread, to serve
Method
- Heat the olive oil in a large frying pan over medium heat. Add the onion and red pepper, stirring often, and cook until softened, about 5 minutes.
- Stir in the Baharat-spiced tomato paste and cook for another minute to release its flavors. Pour in the tinned tomatoes, breaking them down with a spoon. Season with salt and pepper, then let the sauce simmer for about 10 minutes, stirring occasionally, until thickened.
- Using a spoon, create six small wells in the sauce and carefully crack in the eggs. Cook for 5-8 minutes, or until the egg whites are set but the yolks remain runny.
- Garnish generously with fresh parsley and coriander, then serve with warm, crusty bread for dipping.
