Roasted Tomatoes and Burrata

Sweet garlic roasted cherry tomatoes with oozy burrata cheese! This flavourful dish makes the perfect sharing plate or starter.

- 450g cherry tomatoes
- 1 tbsp Bart chopped garlic
- 1 tsp brown muscovado sugar
- 1 tsp Bart oregano
- 1 tsp Bart thyme
- 4 tbsp extra virgin olive oil
- ½ tsp Bart rock salt
- Big pinch freshly ground Bart black pepper
To serve
- 150g burrata
- Toasted sourdough bread
- ½ tsp Bart chilli flakes
Method
1. Preheat the oven to 200C/180C.
2. Tip the tomatoes into a large roasting dish and add the garlic, sugar, oregano, thyme, olive oil, salt, and pepper. Toss well to combine.
3. Roast for 25-30 minutes until the tomatoes are blistered and well cooked.
4. Tip onto a large serving dish. Top with the burrata, sprinkle with chilli flakes, and serve with sliced toasted sourdough bread.
