Roast Mediterranean vegetables

Super easy roast veg dish, makes a perfect addition to burgers, chops, halloumi and many others

- 1 aubergine (medium)
- 2 courgettes
- 1 red pepper (deseeded)
- 1 yellow pepper (deseeded)
- 4 red onions (small)
- 6tbsp olive oil
- 2tsp Bart dried mixed herbs
- 2tsp Bart garlic paste
Method
- Preheat the oven to 220C/22C fan/Gas 8.
- Cut the aubergine, courgettes and peppers into chunks and place in a heavy roasting tin.
- Wedge the onions and add to tin.
- Mix together the olive oil, mixed herbs and garlic, season well and stir into the vegetables.
- Roast in the oven for 30 minutes, stirring once, until lightly charred.
