- 2 tsp olive oil
- 100g chorizo, sliced into 3mm pieces
- 150g raw large prawns
- ½ tsp dried parsley
- 300g dried pasta
- 1 small red onion, finely chopped
- 1 tbsp Bart chopped garlic
- 3 tbsp tomato puree
- 150ml single cream
- 2 tsp Bart fajita seasoning
- 25g grated Parmesan
- Handful fresh parsley, chopped
Method
- Bring a large pot of salted water to the boil. Cook the pasta until al dente, drain reserving a cupful of pasta water.
- Meanwhile, heat the olive oil in a large frying pan over a medium-high heat. Add the sliced chorizo and fry for 1 minute to release their oils. Add in the prawns, dried parsley, salt, and pepper. Fry until just cooked through, 2-3 minutes. Remove from the pan and set aside, leaving as much oil in the pan as possible.
- Tip in the onions and garlic and fry until softened, about 5 minutes. Add in the fajita seasoning and tomato puree and fry for a further 2 minutes.
- Stir through the cream and a splash of pasta water. Tip in the pasta, prawns, chorizo, and Parmesan and stir until the cheese has melted. Finally stir in fresh parsley along with extra splash of pasta water, if necessary. Serve with extra Parmesan grated over.
