Cajun Chicken Pasta

- 2.5 tsp Bart Cajun Seasoning
- 200g spaghetti
- 320g chicken thigh fillets, sliced into bite-size chunks
- 1 tbsp olive oil
- 1 tbsp butter
- ½ brown onion, finely chopped
- 200g cherry tomatoes, halved
- 2 tsp smoked garlic
- 150ml double cream
- 20g Parmesan, finely grated
- Fresh parsley, to serve
Method
1. Bring a large pot of salted water to the boil. Add the pasta and cook until al dente. Drain, reserving a cup of pasta water.
2. Whilst the pasta cooks heat the oil and butter in a large pan over a medium heat. Add the chicken and Cajun seasoning and stir-fry until golden brown and cooked through. Remove from the pan with a slotted spoon.
3. Add a little more oil, if needed. Add the diced onion, smoked garlic and cook for 2 minutes. Add the tomatoes and cook for a further 4-5 minutes.
4. Lower the heat and add the cream and Parmesan along with a splash of pasta water. Stir until the cheese has melted.
5. Add the chicken back into the pan along with the drained pasta. Stir until the pasta is coated in the sauce. Add more pasta water to loosen the sauce, if necessary.
6. Serve sprinkled with fresh parsley and more grated Parmesan.
