A healthier take on the classic coronation chicken sandwich. Swap white bread for wholemeal flatbreads and use creamy yogurt instead of mayo. Crunchy red bell peppers add freshness, while a dollop of mango chutney and a sprinkle of nigella seeds bring bold flavour. A delicious, wholesome lunch!Ingredients

- 4 tbsp thick natural yoghurt
- 2 tsp Bart mild curry powder
- 1 tbsp mango chutney, plus more to serve
- 200g roasted chicken breast, shredded
- 2 tbsp sultanas, soaked in hot water for 10 minutes then drained
- ½ red bell pepper, diced
- Small handful fresh coriander, chopped
- 2 wholewheat flatbreads or pita
- Handful baby spinach
- Nigella seeds
Method
1. Add the yoghurt, curry powder and mango chutney to a small bowl and mix well. Tip in the chicken, sultanas, red pepper, and coriander and mix to coat.
2. Serve with your flatbread or pita with a handful of spinach. Add an extra dollop of mango chutney and a sprinkle of nigella seeds. Enjoy!
