Flavourful Afternoon Tea Sandwiches

Four delicious twists on traditional afternoon tea finger sandwiches. Creamy harissa chicken, chilli and ginger cream cheese with cucumber, curried egg mayonnaise, and black garlic mayo with ham and cheese. These will certainly add a bit of spice to your next afternoon tea!

Curried egg
- 4 slices thick brown bread
- Butter
- 3 large eggs, hard boiled
- 3 tbsp mayonnaise
- 1 tsp Bart hot curry powder
- 2 tsp mango chutney
- 1 tbsp finely chopped fresh coriander
Harissa chicken
- 4 slices thick brown bread
- Butter
- 180g cooked skinless chicken breast, roughly chopped
- 1 roasted red pepper, finely chopped
- 1 tbsp Bart harissa paste
- ½ tsp dried cumin
- 2 tbsp mayonnaise
- 2 tbsp yoghurt
- Handful baby spinach
Black garlic mayo with ham and cheese
- 4 slices white bread
- ¼ cup mayonnaise
- 1 tsp Bart black garlic paste
- 1 tsp Bart chilli paste
- ½ tsp lemon juice
- 1 tbsp finely chopped fresh parsley
- 4 slices ham
- 4 slices cheese
Spicy cream cheese and cucumber
- 4 slices white bread
- Butter
- 120g cream cheese
- 18 slices English cucumber
- 2 tbsp fresh chopped coriander
- Pinch Bart salt and pepper
- ½ tsp Bart ginger paste
- 1 tsp Bart chilli paste
Method
Curried egg sandwiches:
1. Scoop the egg yolks out of the eggs and place in a medium-sized bowl. Add in the mayonnaise, curry powder, and mango chutney. Mash well with a fork until well-combined.
2. Finely chop the egg whites and add to the egg yolks along with the fresh coriander. Mix well to combine.
3. Spread the bread with butter and top two of the slices with egg mix. Top with the remaining slices. Carefully remove the crusts and slice each sandwich into three finger sandwiches.
Harissa chicken:
1. Add the harissa, cumin, mayonnaise, and yoghurt to a medium-sized bowl and mix well to combine. Add the chicken and peppers and stir to coat in the mayonnaise.
2. Spread each slice of bread with butter. Top two of the slices with a small handful of spinach leaves and top with the chicken mix. Top with the remaining bread slices. Carefully remove the crusts and slice each sandwich into three finger sandwiches.
Black garlic mayo with ham and cheese:
1. In a small ball mix together the mayonnaise, black garlic paste, chilli paste, lemon juice, and parsley.
2. Spread each slice of bread with the mayonnaise. Top two of the slices with two slices of ham and two slices of cheese each. Top with the remaining bread slices. Carefully remove the crusts and slice each sandwich into three finger sandwiches.
Spicy cream cheese and cucumber:
1. Add the cream cheese, coriander, ginger paste, and chilli paste to a medium bowl. Season with salt and pepper and mix well to combine.
2. Spread two of the bread slices with the cream cheese. Top with 9 slices of cucumber each. Top with the remaining bread slices. Carefully remove the crusts and slice each sandwich into three finger sandwiches.
