Method
Ingredients
- 1kg roasting potatoes, we used Maris Pipers
- 100ml vegetable oil
- 1 ½ tbsp Bart Harissa Spice Blend
- 2 tbsp olive oil
- 2 tbsp Bart chopped garlic
- Handful chopped fresh parsley, if desired
Method
1. Peel and slice your potatoes into medium chunks.
2. Add the potatoes to a large pot and cover with cold water. Add a generous pinch of salt, cover, and bring to a boil. Once boiling, reduce to a simmer for 10 minutes.
3. Meanwhile preheat the oven to 210C/190C fan.
4. Drain the potatoes and steam dry for 5 minutes.
5. Meanwhile, add the vegetable oil to a large roasting dish and allow to heat up for 10 minutes.
6. Return the potatoes to the pot and shake a little to fluff them up.
7. Add the potatoes to the hot oil, basting them so they are coated in the oil. Roast for 60-70 minutes, or until golden and crispy, turning every 20-30 minutes.
8. Meanwhile mix together the Harissa spice blend, olive oil, and chopped garlic in a small bowl. Season to taste with salt.
9. Once the potatoes are almost ready stir in the spice blend, oil and garlic mix and return the potatoes to the oven for a further 5 minutes.
10. Remove the potatoes from the oil with a slotted spoon and serve with a handful of fresh parsley, if desired!
