Garlic Parmesan Potatoes

These garlicky, herby, Parmesan potatoes are packed with flavour and make an amazing side dish or tasty snack. Served with smoked garlic mayo, this dish is for all the garlic lovers.

- 650g new potatoes
- 2 tbsp olive oil
- 2 tsp Bart dried parsley
- 1 tsp Bart dried chives
- 2 tsp Bart garlic granules
- Pinch salt
- Pinch ground black pepper
- 15g melted butter
- 60g grated Parmesan
Smoked garlic mayo
- 6 tbsp mayonnaise
- 1 tsp smoked garlic paste
Method
1. Preheat the oven to 220C/200C fan.
2. Wash and halve the potatoes. Score the potato flesh into a diamond shape.
3. Tip the potatoes into a large mixing bowl. Add the olive oil, parsley, garlic granules, salt, and pepper. Toss well to coat.
4. Spread the melted butter into a large roasting dish. Sprinkle over the grated Parmesan.
5. Place each potato cut side down into the parmesan. Bake for 25-30 minutes until the potatoes are cooked through. Leave to cool for 5-10 minutes to allow the cheese to harden. Meanwhile, mix together the mayonnaise and smoked garlic paste in a small bowl.
6. Serve the potatoes with the garlic mayo.
