Feta and Halloumi Filo Parcels

Baked feta and halloumi filo parcels served with hot harissa honey. The creaminess of the feta and saltiness of halloumi go together perfectly to create the perfect bite every time.

Method

  1. Preheat the oven to 230C/210C fan.
  2. Slice the feta and halloumi in half once through the centre of the cheese and then slice each piece into 5 bars widthways.
  3. Brush the filo sheets generously in butter. Slice the filo into 4 strips (the half sheet into 2), around 1cm wider than the cheese pieces. Place a piece of halloumi and piece of feta along the bottom of one strip and roll up tightly in the pastry. Repeat with the remaining cheese and filo until you have 20 rolls.
  4. Arrange on a large, lined baking tray and brush with more butter. Flip over and brush once more.
  5. Bake for 13-15 minutes until the filo pastry is golden brown.
  6. Meanwhile, and the honey, chilli, and harissa to a small saucepan. Heat over a low heat until the honey begins to gently simmer. Stir to combine then remove from the heat. Leave to rest whilst the cheese parcels bake.
  7. Remove the cheese parcels from the oven and leave to rest for 5 minutes. Serve with the hot harissa honey.
