Fajita Chicken Grain Bowls

For the Chicken and Peppers:
- 600g chicken breast, thinly sliced
- 3 bell peppers (red, yellow, green), sliced
- 1 large red onion, sliced
- 2 tbsp olive oil (divided)
- 2 tbsp Bart fajita spice blend
- 1 tsp Bart ancho chilli (optional)
- Chipotle 1 lime, juiced
For the Rice and Beans:
- 2x 250g packs microwave brown rice and quinoa, or grains of your choice
- 400g can black beans, rinsed and drained
- 1 tsp honey
- 1 tbsp Bart chipotle paste
- Salt and pepper to taste
- To serve (optional) Greek yoghurt/sour cream, avocado/guacamole, fresh coriander
Method
1. Add the chicken slices to a medium bowl with 1 tbsp olive oil, 1 ½ tbsp of the fajita spice blend, ancho chilli, and lime juice. Let marinate for at least 15 minutes.
2. Heat a large frying pan over medium-high heat. Add the chicken and cook for 4-5 minutes until fully cooked, stirring often. Remove and set aside.
3. Wipe the frying pan clean and add the remaining 1 tbsp olive oil. Heat over a medium-high heat. Add the peppers and onions and remaining ½ tbsp of the fajita spice blend. Fry until tender-crisp, about 5-7 minutes. Remove from the heat and set aside.
4. Wipe the pan clean again and add the black beans, honey and chipotle. Warm over a low-medium heat until just heated through, stirring frequently.
5. Serve or divide into meal prep containers. (Optional) Garnish with chopped coriander, yoghurt/sour cream, and avocado/guacamole.
