Cinnamon and Vanilla Strawberry Sandwiches

- 10 slices Brioche
- Around 13 fairly equally sized strawberries, stems sliced off and halved
- 450 ml whipping cream
- 3 tbsp icing sugar
- The seeds from 1 Bart Vanilla Pod
- 2 tsp Bart cinnamon
Method
1. Add the whipped cream to a large bowl along with the icing sugar, vanilla seeds and cinnamon. Use an electric whisk and beat until it almost reaches stiff peaks.
2. Spread a large piece of cling film onto your work surface. Place down one slice of brioche in the centre.
3. Spread a thick layer of whipped cinnamon cream onto the bread. Arrange 5 strawberry halves cut-side-down on top in a cross shape to make sure you get a good cross section. Top with more cream to fill in the gaps. Top with the 2nd slice of brioche. Wrap the sandwich with the cling film and repeat until you have 5 sandwiches. Refrigerate for at least 3 hours so the cream can set.
4. Unwrap the sandwiches, slice in half diagonally, and serve!
