Chocolate Stuffed French Toast Crumpets with Caramelised Bananas

These crumpets are stuffed with chocolate spread, dipped in egg, and fried until crispy. Serve drizzled with golden caramelised bananas and plenty more chocolate spread.

- 5 crumpets
- 4 heaped teaspoons chocolate spread
- 2 large eggs
- 2 tbsp milk
- 1 tsp vegetable oil
- 1 tsp Bart ground cinnamon
- 4 tsp caster sugar
- More chocolate spread, to serve
Caramelised bananas
- 2 bananas
- 3 tbsp caster sugar
Method
1. Firstly, prepare the bananas. Add the slices to a bowl and sprinkle over the sugar. Toss to coat.
2. Scoop a one inch hole in the centre of 4 of the crumpets, being careful not to cut through the crumpet. Fill each hole with a heaped teaspoon of Nutella. Press the scooped out pieces of crumpet onto the chocolate spread to cover it. Use crumbs from the 5th crumpet to ensure the chocolate spread is covered.
3. Crack the eggs into a large shallow bowl. Add the milk and whisk well with a fork.
4. Heat a non-stick frying pan over a medium heat. Add the bananas to the pan and fry until golden, around 3 minutes on each side. Remove from the pan and set aside. Remove the pan from the heat and wipe clean.
5. Soak the crumpets for 90 seconds on each side in the egg mix.
6. Add the oil to the pan and heat over a medium heat. Fry the crumpets until golden on each side, around 2 minutes each side. Remove from the heat.
7. Mix the cinnamon and sugar in a small bowl and tip onto a plate. Toss the crumpets in the sugar until well coated.
8. Serve with the bananas and drizzle with more chocolate spread.
