For the prawns
- 300g raw king prawns (peeled)
- 1 tbsp Bart Chipotle & Red Pepper Paste
- ½ tsp Bart Sweet Smoked Paprika
- ½ lime (juice)
- 1 tbsp olive oil
- Salt
For the mango salsa
- 1 ripe mango, diced
- ¼ red onion, finely diced
- 1 small red chilli, finely chopped
- Juice of 1 lime
- Handful coriander, chopped
- Pinch of salt
For the chipotle crema
- 8 tbsp sour cream
- 1 tbsp Bart Chipotle & Red Pepper Paste
- ½ a lime (juice)
To assemble
- 8 small white corn tortillas
- 1 little gem lettuce, shredded
- 3 tbsp Bart Chipotle Crunch
- Lime wedges
Method
1. In a bowl, mix the prawns with Chipotle Paste, Sweet Smoked Paprika, lime juice, olive oil and a pinch of salt. Set aside for 10 minutes.
2. Make the mango salsa by combining all ingredients in a bowl. Taste and adjust lime/salt.
3. Stir together the sour cream, Chipotle Paste and lime juice to make a quick chipotle crema.
4. Heat a frying pan over medium-high heat and cook the prawns for 2–3 minutes until pink and lightly charred.
5. Warm the tortillas.
6. Build the tacos: add crema, shredded lettuce, then prawns, then a spoonful of mango salsa. Finish with a generous sprinkle of Chipotle Crunch. Finish with a squeeze of lime.
