The ultimate loaded nachos. Beef mince fried with onion and our rich Chipotle & Red Pepper Paste, topped with melty cheese, tomato, avocado and sour cream, and finished with a squeeze of lime.Ingredients

Chipotle beef
- 1 tsp oil
- 250g beef mince
- ½ brown onion, finely chopped
- 4 tbsp Bart Chipotle & Red Pepper Paste
To assemble the nachos
- 180g tortilla chips
- 170g grated Cheddar cheese, or a mixture of grated Cheddar and Mozzarella
Toppings
- 1 medium tomato, diced
- 1 avocado, chopped
- Sour cream
- 1 fresh jalapeno, sliced
- Lime wedges and zest
- Handful fresh coriander, chopped
- Bart Sweet Smoked Paprika
Method
1. Preheat the oven to 190°C/170°C fan.
2. Heat the oil in a frying pan over a medium-high heat. Add the onion and cook until soft. Add the beef mince and fry until browned. Stir in the Chipotle & Red Pepper Paste and cook for a further 2 minutes.
3. Line a baking dish with foil and spread over half of the tortilla chips. Spoon over half of the beef mixture and sprinkle with half of the cheese. Add the remaining tortilla chips on top, followed by the remaining beef and cheese.
4. Place in the oven for 10 minutes, or until the cheese has melted.
5. Serve immediately with your chosen toppings.
