Fries
- 500g frozen French Fries
- 1 tbsp Bart fajita seasoning
- 150g shredded spicy cheese mix
Steak
- 400g thin skirt or flank steak
- 4 tsp olive oil
- 2 tbsp Bart chimichurri seasoning
Crema
- 200g Sour cream
- 1 lime, juice and zest
- 1 tsp Bart garlic paste
- Pinch salt
Onions
- 2 onions, diced
- 1 tbsp olive oil
- 1 tsp brown sugar
Method
1. Preheat the oven to 220C/200C fan.
2. Mix together the ingredients for the lime crema in a small bowl. Cover and leave seta aside in the fridge.
3. Heat the oil in a large frying pan over a medium high heat. Add the onion and stir well. Turn the heat to low and leave the onions to caramelise whilst you prepare the remaining ingredients, stirring occasionally. 10 minutes before serving stir through the brown sugar.
4. Tip the fries onto a large baking tray and cook according to packet instructions.
5. Meanwhile, pat the steaks dry and rub with 2 tsp olive oil. Sprinkle over the chimichurri seasoning and rub into the steaks. Heat the remaining olive oil in a large frying pan and fry the steaks according to your preference. Remove to a plate and cover in foil. Leave to rest.
6. Once the fries are cooked add them to a heat proof bowl and toss with the fajita seasoning. Tip onto a lined baking tray and sprinkle over the chilli cheese mix. Place back into the oven until the cheese has melted, 3-5 minutes.
7. Meanwhile slice the steak into strips.
8. Tip the cheesy fries into a serving bowl. Top with the caramelised onions, steak, and a drizzle of lime crema.
