- 4 large tortilla wraps
- 4 tbsp Bart chipotle & red pepper paste
- 4 shredded, cooked chicken breasts
- 200g grated cheese (Cheddar, mozzarella, or a Mexican-style blend)
- 1 small red onion, finely chopped
- Fresh coriander, sour cream, salsa, and guacamole, to serve
Method
1. Place the shredded chicken in a bowl and mix well with the chipotle & red pepper paste until evenly coated.
2. Heat a large frying pan over medium-high heat. Place a tortilla in the pan, then sprinkle over a small handful of cheese. Add a quarter of the shredded chicken mixture and a scattering of red onion, followed by another small handful of cheese. Fold the tortilla in half and cook for a few minutes on each side until the cheese has melted and the chicken is heated through.
3. Repeat with the remaining tortillas and filling.
4. Serve hot, garnished with fresh coriander, and enjoy with sour cream, guacamole, and salsa on the side.
