Steak Quesadillas

Quesadillas loaded with perfectly seasoned steak and oozing with cheese. Serve these with guacamole, salsa, and sour cream for the perfect flavour-packed dinner.

- 400g thin skirt or flank steak
- 1 tbsp Bart steak seasoning
- 1 tsp Bart sweet smoked paprika
- 2 tbsp olive oil
- 1 onion, sliced
- 1 green pepper, deseeded and sliced
- 250g low-moisture mozzarella, grated
- 250g spicy Cheddar, grated
- 8 small corn tortillas
To serve
- Sour cream
- Salsa
- Guacamole
Method
1. Mix the steak seasoning and paprika in a small bowl. Pat the steak dry with kitchen towel. Sprinkle the seasoning over the steak so it evenly coats all sides.
2. Heat a large frying pan over a medium high heat. Add 1 ½ tbsp of the oil.
3. Add the steak and fry for 4-8 minutes on each side until it is cooked to your preference.
4. Remove the steak and transfer to a cutting board. Allow to rest.
5. Wipe the frying pan clean with kitchen towel. Add the remaining ½ tbsp of oil to the skillet and fry the onions and peppers until soft, around 8 minutes, stirring often.
6. Remove the onions and peppers to a bowl. Wipe the pan clean and set aside.
7. Slice the steak into thin strips against the grain.
8. In a medium bowl combine the shredded mozzarella and Cheddar.
9. Assemble the quesadillas by sprinkling a small handful of the cheese over each of the tortillas. Top the cheese with the steak followed by the onions and peppers. Sprinkle over the remaining cheese.
10. Place the pan back over a medium heat. Carefully transfer a quesadilla to the pan using a spatula. Gently fold in half and cook each quesadilla for 1-2 minutes on each side until golden brown and the cheese has melted. Serve immediately with guacamole, salsa, and sour cream!
