Masala Chips

Mix things up with these spicy Masala chips served with homemade pickled onions, yoghurt, and coriander. This is the perfect sharing plate for your next party or movie night!

Method

  1. Add the thinly sliced red onion to a small bowl and squeeze over the lemon juice. Season with salt. Mix well to coat the onion and set aside to pickle whilst you cook the fries.
  2. Arrange the fries on a baking tray and cook according to packet instructions.
  3. Meanwhile, add the oil and butter to a medium-sized frying pan and add the onion. Fry, stirring often, until beginning to caramelise, around 7-8 minutes.
  4. Add the garlic and ginger paste and fry for 1 minute before adding the spices and frying for a further 30 seconds.
  5. Add the passata and brown sugar and cook until thickened. Remove from the heat and set aside.
  6. Add the fries to a large bowl with the tomato sauce. Toss well to coat..
  7. Serve with the pickled onions, yoghurt, and coriander!
