BBQ Macaroni Cheese

A sweet and slightly spicy macaroni cheese flavoured with our Smoky BBQ Seasoning. Topped with crispy breadcrumbs and made with smoked Cheddar and Gruyère.Ingredients

- 300 g macaroni or other short pasta
- 50 g butter
- 4 tbsp plain flour
- 500 ml whole milk
- 150 g smoked cheddar, grated
- 75 g Gruyère, grated
- 1 tbsp BBQ seasoning (plus extra for topping)
- 50 g panko breadcrumbs
- 1 tbsp olive oil or melted butter
- ½ tsp Bart Chives
- Salt and black pepper to taste
Method
1. Cook the macaroni in salted boiling water until al dente. Drain and set aside.
2. In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly. Gradually whisk in the milk until smooth. Simmer gently for 4-5 minutes, stirring, until thickened.
3. Remove from the heat and stir in most of the smoked cheddar, Gruyère, and 1 tbsp of BBQ seasoning. Season with salt and black pepper to taste.
4. Stir the cooked pasta into the cheese sauce. Tip into a medium sized oven-proof dish. Sprinkle over the remaining grated cheese.
5. In a small bowl, mix the panko breadcrumbs with olive oil or melted butter, a pinch of BBQ seasoning, and the Chives. Sprinkle evenly over the mac and cheese.
6. Bake at 200°C (180°C fan) for 15-20 minutes, or until golden and bubbling. Serve hot.
