- 320g macaroni or spirali pasta
- 200g bacon lardons
- 2 tbsp butter
- 2 tbsp flour
- 1 tbsp Bart chipotle paste
- 1 ½ tsp Bart sweet smoked paprika
- ½ tsp Bart garlic granules
- 750ml whole milk
- 225g grated Cheddar
- 120g grated mozzarella
- Salt and pepper, to taste
- 5 tbsp panko breadcrumbs
- 2 tsp oil
Method
1. Preheat the oven to 200C/180C fan.
2. Heat a large pan over a medium heat. Add the bacon and fry until crispy. Stir through the butter until melted. Stir though the flour and cook for 30 seconds, stirring constantly. Stir in the chipotle paste, 1 tsp of the paprika, and garlic granules.
3. Gradually whisk in the milk. Simmer until thickened, stirring often. Once thickened, lower the heat and add in the cheese. Stir until melted and remove from the heat. Season to taste with salt and black pepper.
4. Meanwhile, cook the macaroni until al dente. Drain.
5. Stir the Pasta into the cheese sauce.
6. Mix the breadcrumbs remaining smoked paprika and sprinkle over the pasta.
7. Drizzle with the oil and bake until golden and bubbling, around 20-25 minutes.
