Umami Mushroom & Goat's Cheese Pizza

Inspired by one of our customer reviews, a goat’s cheese and garlicky mushroom pizza on a crisp base, brushed with our umami paste. Finished with oregano, thyme and a fresh handful of rocket.Ingredients

For the base
• 1 pre-cooked pizza base
• 2 ½ tbsp Bart Umami Paste
• 1 tbsp olive oil
For the topping
• 250g mixed mushrooms (e.g. chestnut, shiitake, oyster, wild)
• 2–3 cloves garlic, thinly sliced
• 100g goat’s cheese log, sliced
• Pinch Bart Oregano
• Olive oil, for roasting
• Salt & black pepper
Method
1. Preheat the oven to 200°C. Tear or slice the mushrooms into a mix of rustic shapes, then toss with olive oil, salt, pepper, and half the garlic. Roast for 10–12 minutes until golden and slightly caramelised.
2. Increase the oven to 220°C (200°C fan). Roll out the pizza dough, then mix the umami paste with olive oil until loosened and brush a thin, even layer over the base.
3. Scatter the roasted mushrooms over the base, add the remaining garlic, dot with goat’s cheese, and sprinkle with oregano and any fresh herbs if using.
4. Bake for 10–15 minutes until the crust is golden and crisp and the cheese is soft and bubbling.
5. Finish with a drizzle of olive oil, a crack of black pepper, and a light brush of warmed umami paste if you like. Serve topped with rocket.
