For the wraps
- 4 frozen parathas
- 225g paneer, sliced into 1 inch cubes
- 1 tbsp vegetable oil
- 1 red pepper, thinly sliced
- 1 red onion, thinly sliced (set aside a little to serve)
- 1 handful fresh coriander, chopped (set aside a little to serve)
- Green coriander chutney, to serve (Mango chutney or raita will also taste great!)
For the paneer
- 3 tbsp Greek yoghurt
- 1 tsp Bart ginger paste
- 1 tsp Bart garlic paste
- 1 tsp Bart Kashmiri chilli powder
- 2 tsp Bart tandoori spice blend
- ¼ tsp salt
Method
- In a medium sized bowl mix together the yoghurt, ginger paste, garlic paste, Kashmiri chilli powder, tandoori spice blend, and salt. Add the paneer and mix well. Set aside.
- Meanwhile, heat the oil in a large frying pan over a medium-high heat. Add the onion and pepper and fry until starting to soften, 3-4 minutes. Tip in the paneer and fry for a further 4-6 minutes until the paneer is well cooked. Remove from the heat and stir through the coriander.
- Cook the parathas according to packet instructions. Serve the rolls spread with 1 tbsp of coriander chutney, a couple of spoonfuls of the paneer filling, and some fresh coriander and sliced red onion.
