Method
Ingredients
For the wraps
- 4 frozen parathas
- 225g paneer, sliced into 1 inch cubes
- 1 tbsp vegetable oil
- 1 red pepper, thinly sliced
- 1 red onion, thinly sliced (set aside a little to serve)
- 1 handful fresh coriander, chopped (set aside a little to serve)
- Green coriander chutney, to serve (Mango chutney or raita will also taste great!)
For the paneer
- 3 tbsp Greek yoghurt
- 1 tsp Bart ginger paste
- 1 tsp Bart garlic paste
- 1 tsp Bart Kashmiri chilli powder
- 2 tsp Bart tandoori spice blend
- ¼ tsp salt
Method
1. In a medium sized bowl mix together the yoghurt, ginger paste, garlic paste, Kashmiri chilli powder, tandoori spice blend, and salt. Add the paneer and mix well. Set aside.
2. Meanwhile, heat the oil in a large frying pan over a medium-high heat. Add the onion and pepper and fry until starting to soften, 3-4 minutes. Tip in the paneer and fry for a further 4-6 minutes until the paneer is well cooked. Remove from the heat and stir through the coriander.
3. Cook the parathas according to packet instructions. Serve the rolls spread with 1 tbsp of coriander chutney, a couple of spoonfuls of the paneer filling, and some fresh coriander and sliced red onion.
