Spiced Prawn Brioche Rolls

- 300g cooked large prawns, shells removed
- 2 tbsp Japanese mayo
- 1 tbsp sour cream
- 2 tsp tomato ketchup
- ½ tsp Worcestershire sauce
- ½ tsp Bart sweet smoked paprika, plus extra to serve
- 1 lemon, juice and zest
- 1 small handful fresh dill, chopped
- Salt, to taste
- Tellicherry peppercorns, to taste
- 8 brioche rolls
- 40g butter
- 8 leaves little gem lettuce, torn in half
Method
1. Chop the prawns into smallish pieces and add to a medium bowl along with the mayo, sour cream, ketchup, Worcestershire sauce, smoked paprika, 2 tsp of lemon juice, the lemon zest, and dill. Mix well and season to taste with salt and Tellicherry pepper.
2. Slice the brioche rolls lengthways, ensuring you don’t slice all the way through. Melt the butter in a frying pan over a medium heat and fry the rolls on the sliced open part until golden brown.
3. Fill each roll with 2 pieces of lettuce and the prawn filling. Dust with a little more paprika before serving!
