- 300g cooked large prawns, shells removed
- 2 tbsp Japanese mayo
- 1 tbsp sour cream
- 2 tsp tomato ketchup
- ½ tsp Worcestershire sauce
- ½ tsp Bart sweet smoked paprika, plus extra to serve
- 1 lemon, juice and zest
- 1 small handful fresh dill, chopped
- Salt, to taste
- Tellicherry peppercorns, to taste
- 8 brioche rolls
- 40g butter
- 8 leaves little gem lettuce, torn in half
Method
- Chop the prawns into smallish pieces and add to a medium bowl along with the mayo, sour cream, ketchup, Worcestershire sauce, smoked paprika, 2 tsp of lemon juice, the lemon zest, and dill. Mix well and season to taste with salt and Tellicherry pepper.
- Slice the brioche rolls lengthways, ensuring you don’t slice all the way through. Melt the butter in a frying pan over a medium heat and fry the rolls on the sliced open part until golden brown.
- Fill each roll with 2 pieces of lettuce and the prawn filling. Dust with a little more paprika before serving!
