Prawn laksa

Laksa is a spicy noodle soup popular in the Peranakan cuisine of Southeast Asia. This recipe is full of flavour and packed with goodness.

Method

  1. Gently heat the oil in a large saucepan. Add the lemongrass, garlic, ginger, chilli and turmeric and cook gently for a minute.
  2. Turn the heat up to medium, add the chicken to the pan and stir fry for 2-3miutes until it's coloured.
  3. Add the stock and coconut milk to the pan then stir in the fish sauce, tomato puree and sugar.
  4. Bring the laksa to a simmer and add the soda noodles and prawns. Cook for 4-5 minutes until the prawns and noodles are cooked.
  5. Divide the soup between two bowls then top with the cucumber, spring onions and radishes then scatter with coriander and squeeze over some lime juice.
