Prawn laksa

Laksa is a spicy noodle soup popular in the Peranakan cuisine of Southeast Asia. This recipe is full of flavour and packed with goodness.

- 1tbsp Sesame oil
- 1tsp Bart lemongrass paste
- 1tsp Bart garlic paste
- 1tsp Bart ginger paste
- 1/2 tsp Bart green chilli paste
- 1tsp Bart turmeric
- 1 Large chicken breast
- 500ml Chicken stock
- 400ml Coconut milk
- 2tsp Bart fish sauce
- 1tsp Tomato puree
- 1tsp Sugar
- 150g Soba noodles
- 150g Large raw prawns
- 4cm Cucumber (cut into strips)
- 2 Spring onions
- 2 Radishes
- small bunch Coriander
- 1/2 Lime,
Method
- Gently heat the oil in a large saucepan. Add the lemongrass, garlic, ginger, chilli and turmeric and cook gently for a minute.
- Turn the heat up to medium, add the chicken to the pan and stir fry for 2-3miutes until it's coloured.
- Add the stock and coconut milk to the pan then stir in the fish sauce, tomato puree and sugar.
- Bring the laksa to a simmer and add the soda noodles and prawns. Cook for 4-5 minutes until the prawns and noodles are cooked.
- Divide the soup between two bowls then top with the cucumber, spring onions and radishes then scatter with coriander and squeeze over some lime juice.
