This is an amazing way to get the most out of the humble chicken wing. The rub is smokey, hot and sweet.

- 2tsp Bart chilli flakes
- 3tsp Bart sweet smoked paprika
- 2tsp Bart onion granules
- 2tsp Bart rock salt
- 1tsp Bart oregano
- 1tsp Bart thyme
- 3tsp Brown sugar
- 2tsp Mustard powder
- 2tbsp Oil
- 1kg Chicken wings
Method
- Combine the spices, herbs and sugar with the oil to make a thick paste. Put the chicken wings into a large, press seal bag and pour in the spice mixture.
- Massage the bag until the wings are completely coated then leave to marinate in the fridge for 2-3 hours or overnight.
- When ready to cook, pre heat the oven to 240C/220C fan, tip the wings out onto a baking tray and drizzle over any spice mix left in the bag.
- Roast for 30 minutes, turning once, until the wings are cooked through and the skins are crisp.
