Sage and Apple Vegetarian Sausage Rolls

Flaky puff pastry sausage rolls made with juicy apples and flavoured with sage. These rolls are veggie friendly and perfect for serving at picnics and garden parties.Ingredients

- 320g ready-rolled puff pastry
- 450g vegan sausages
- 1 ½ tsp Bart dried sage, plus more for sprinkling
- Salt and pepper, to taste
- 1 small egg, beaten
Onion and apple mix
- 2 tsp neutral oil
- 1 brown onion, finely diced
- 1 apple, cored and finely diced
Method
1. Start by making preparing the onion and apple. Heat the oil in a medium-sized frying pan. Add the onions and fry until starting to soften, stirring often, around 5 minutes.
2. Tip in the apple and cook for a further 20 minutes until softened.
3. Remove from the heat and set aside.
4. Preheat the oven to 200C/180C.
5. Remove the sausages from their casings and add to a large bowl along with the onion and apple mix and dried sage. Season with salt and pepper and stir to combine.
6. Roll out the puff pastry. Shape the meat in a large log shape slightly to left of centre.
7. Brush the shorter edge of the pastry with egg wash. Fold the larger pastry edge over the sausage and use a fork to seal the pastry.
8. Slice into 8 equal sausage rolls. Brush with a little egg and sprinkle over a little extra dried sage.
9. Bake for 30 minutes, or until golden brown and cooked all the way through.
