Crisp, crunchy roasted potatoes topped with a rich tomato sauce infused with Sweet Smoked Paprika. Served with a dollop of garlicky mayonnaise.Ingredients

- 900g potatoes, peeled and cut into 2cm pieces
- 6tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 230g tinned chopped tomatoes
- 2 tbsp tomato puree
- 2 tsp Bart Sweet Smoked Paprika
- 150ml good quality mayonnaise
Method
1. Preheat the oven to 200C/180C fan. Put a heavy roasting tin in the oven with 4 tbsp of the oil in it. Steam the potatoes over boiling water for 5 minutes until barely tender. Drain thoroughly and add to the hot oil. Toss to coat before returning to the oven.
2. Roast in the oven for 25-30 minutes, turning occasionally until crisp and golden.
3. Meanwhile make the tomato sauce by frying the onion in the remaining oil in a small pan for 4-5 minutes until soft. Stir in half of the minced garlic and fry for thirty seconds before stirring in the tomato puree and cooking for a further 2 minutes. Add the tinned tomatoes and smoked paprika, stir well and season to taste with salt.
4. Make the aioli. Stir together the mayonnaise and the remaining garlic and transfer to a serving bowl.
5. Place the potatoes in a serving dish and spoon the tomato sauce on top. Dollop the aioli on top of the sauce and sprinkle with an extra sprinkle of Paprika.
