Mini baked beef tacos stuffed with chilli cheese and flavoured with our spicy fajita spice blend. Delicious served with sour cream, guacamole, and tomato salsa.Ingredients

Mini tacos
- 1tsp oil, for frying
- 500g lean beef mince
- 1½ tbsp Bart fajita seasoning
- 2 tbsp tomato puree
- 250ml beef stock
- 250g grated cheese, we used half mozzarella half chilli Cheddar
- 18 mini tortillas, 10cm across
To serve
- Sour cream
- Guacamole
- Salsa
Method
1. Preheat the oven to 200C/180C.
2. Heat the oil in a large pan and add the beef mince. Fry until browned, breaking up with a wooden spoon.
3. Sprinkle over the fajita seasoning and tomato puree and fry for a further minute. Add in the beef stock and simmer until thickened but still moist – 3-5 minutes. Remove from the heat and set aside.
4. Line 2 large baking trays with baking paper. Dip both sides of each tortilla in the beef mix. Lay out the tacos, on the baking tray and top with a spoonful of beef mix and a generous sprinkling of cheese.
5. Bake for 2-3 minutes until the cheese has melted. Fold over and bake for a further 8-9 minutes.
6. Serve with sour cream, salsa, and guacamole.
