Mediterranean Halloumi and Orzo Salad

Method
Ingredients
- 150g orzo
- 400ml vegetable stock
- 1 block halloumi, sliced into bite-sized cubes
- 200g cherry tomatoes, halved
- ½ cucumber, diced
- ¼ red onion finely diced
- 50g pitted olives, sliced
- Handful fresh herbs (parsley, mint, basil)
- Olive oil
Dressing
- 2 tbsp Bart Mediterranean Lemon, Herb & Shallot Paste
- 3 tbsp olive oil
Method
1. Cook the orzo according to packet instructions in the vegetable stock. Drain and set aside.
2. Meanwhile roast the tomatoes tossed in olive oil and salt at 200°C for 20 minutes. Set aside to cool.
3. Fry halloumi in a little oil until golden.
4. Whisk dressing with olive oil. Toss orzo with halloumi, tomatoes, cucumber, olives, onion and herbs. Pour over the dressing and mix again.
