Masala Cake
- 240ml Vegetable oil
- 3 Eggs
- 250g Brown sugar
- 250g Self raising flour
- 3tsp Bart garam masala
- Pinch of salt
- 2 Apples (cored and sliced)
Caramel Sauce
- 200g light brown sugar
- 4 tbsp butter
- 1 tsp Bart sea salt
- 60 ml whole milk
- 60 ml double cream
- 2 tsp vanilla extract
Method
- Heat the oven to 150C and line a tin, approx. 22cm x 22cm with greaseproof paper.
- Beat together the oil and eggs. In a separate bowl combine the sugar, flour, masala and salt, using your fingers to break down any lumps of sugar. Pour in the egg mixture and beat until smooth.
- Spoon the mixture into the cake tin, spreading to the edges, then layer the apple slices on top. Bake for 1 hour until the cake is cooked through.
- When the cake is out of the oven, make the caramel sauce. Put all of the sauce ingredients into a saucepan and heat gently to melt, stirring all the time. Whisk constantly until thickened, 6-9 minutes. Remove from the heat.
- Poke holes all over the cake in between the apple slices and pour over the caramel sauce.
- Wait for the cake to cool and serve with crème fraiche.
