Keralan Paneer Curry

A quick but flavourful paneer curry made using our Keralan Spiced Coconut Paste. Ready in 30 minutes this dish is perfect for midweek dinner.Ingredients

- 250g paneer, cut into cubes
- 1 onion, finely sliced
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 3 tbsp Bart Keralan Spiced Coconut Paste
- 200ml coconut milk
- 1 tbsp vegetable oil
- Fresh coriander, chopped (to serve)
- Lime wedges (to serve)
- Steamed rice or naan (to serve)
Method
1. Heat the oil in a large frying pan over medium heat. Add the paneer and fry for 5-7 minutes, turning, until golden on most sides. Remove and set aside.
2. In the same pan, add the onion and cook for 3-4 minutes until softened. Add the sliced peppers and cook for a further 4-5 minutes.
3. Stir in the Bart Keralan Spiced Coconut Paste and cook for 1-2 minutes.
4. Pour in the coconut milk, bring to a simmer, and return the paneer to the pan.
5. Simmer gently for 5 minutes until the sauce has slightly thickened and everything is heated through.
6. Serve with rice or naan, topped with coriander and a squeeze of lime.
