Method
Ingredients
- 1 tbsp Bart Gochujang paste
- 1 tbsp soy sauce
- Few grinds of Bart Wayanad Peppercorns
- 1 tsp Bart Chilli Flakes
- 1x pack Real Seafood Co Raw King Prawns
- 1 tsp Bart Garlic paste
- 1 tsp Bart Ginger paste
- 4x spring onions, sliced - white and green ends separated
- Mixed veg, chopped - we went for red peppers and green beans!
- 2x eggs, beaten
- 1x pouch of microwaveable long grain rice
To serve: - Sesame seeds
- Sliced red chilli
Method
1. In a bowl, mix together the gochujang, soy sauce, peppercorns and chilli flakes. Add the prawns and set aside for at least 30 mins to marinade.
2. Heat a splash of oil over a high heat in a wok. Remove the prawns from the marinade (reserve marinade though) and add to the pan - stir until just cooked through - this will only take a few minutes. Then remove the prawns from the pan and set aside.
3. Heat another good glug of oil in the wok, and add the garlic, ginger and spring onion whites. Cook until fragrant and then add the veg. Stir fry until just tender, then push aside and add the beaten eggs. Leave them untouched to cook for a minute or two, and then start stirring the eggs through the veg. At this point, add the pouch of rice and reserved marinade. Continue to stir fry until the rice is piping hot. Add the prawns back in at the last minute so not to overcook them.
4. Serve up with a sprinkle of sesame seeds, the spring onion greens and the red chillies - enjoy!
