- 150g self-raising flour
- ½ tsp baking powder
- 50g caster sugar
- 1 tsp ground cinnamon
- 2 eggs
- 1tsp sunflower oil
- 180ml milk
- Oil or butter for cooking in
- Maple syrup to serve
Method
- Sift the flour and baking powder into a bowl and add the sugar and cinnamon.
- Add the eggs and oil and stir to combine. Gradually add the milk whilst whisking until fully fully combined. Make sure you use the batter fairly quickly after this for best results.
- Put a nonstick pan over a low heat with some round cookie cutters in. Spray or brush the pan and inside the cutters with oil or butter. Fill the cutters about ⅔ full, then cover with a lid and cook for roughly 10 mins. When you remove the lid, you should see some bubbles appearing on the top of the pancake - this is when it’s time to flip. You can do this by moving the pancakes (in the cutters) to a tray, plate or lid, and putting the pan upside on top. Then confidently flip it back over.
- Leave to cook for a few more minutes, then pop out onto your plate.
- Drizzle with maple syrup or your other favourite pancake toppings. Enjoy!
